Strolling along the beach, we wanted to enjoy the good life of Barcelona. The white sofas of the minimalist style PEZ – a bar next to Opium – were highly inviting.
We approached the bartender, Tao, to hear his mojito philosophy. In one night, he prepares about 400 mojitos, but he claimed to use the same time and tenderness for each one of them. His trick was to use fresh lemon juice (“well sometimes, we only have Pulco”, but I try to use the fresh stuff”) and white sugar as the base. A decent quantity of large and fresh, green mint leaves were added – no risk of clogging between the teeth. He then filled up with a few centimetres of Nordic Mist before adding the ice (small ice cubes that were smashed right before going into the glass). First then, did he add the pieces of lime. The theory is that this chills the lime and then when the rum is poured the juices mix better... Finally he filled up with a good quantity of Bacardi. An upscale mojito was served, and enjoyed on the white sofas with a view to the sea.
We all agreed that this was a highly decent mojito. Not too sweet, albeit a bit strong. The mint flavour came through and mixed well with the rum, sugar and the lemon/lime. Yet, we are not completely convinced about the use of lemon juice, and we tend to prefer brown sugar. This night, the mojitos we tasted were both made with Bacardi. What we noticed was that you need to adapt your recipe to the rum you are using. When well prepared and balanced with the other ingredients, many types of rum can make a good mojito.
For sure more expensive than most mojitos in Barcelona, but at the same time you get the luxury atmosphere and mojitos with a personal touch. Perfect for any summer night that you want to make special.
Ah! I almost forgot to tell you the ingredients:
* Half-smashed ice
* Lime pieces on top of the ice
* Lemon juice mixed with the sugar
* 2 spoons of white sugar
* Large leaves of fresh mint in abundance
* Nordic Mist tonic (added before the rum)
* Bacardi white
* Tall glass
* Long black straw
